The true reason for the creation of this product is to demonstrate that the Moscato grape, just pressed and with only 3% vol. of alcohol, is able to provide a must rich in perfume with a very full and seductive taste.

PRODUCTION TECHNOLOGY
We try to simplify the production process of this particular grape must as much as we can in order to preserve the unique characteristics of the Moscato grape.
The must is obtained by soft pressing the grapes; it is then transferred to a refrigerated tank at a temperature of 0°C.
The vinification process is simply by transferring the must from this refrigerated tank to a second tank where it undergoes an initial rise of temperature (to 15°C) followed by a period of fermentation which converts only 3% vol. of alcohol.
The grape must is then cooled to 0°C, and following a brief pause in its tank when fermentation has finished, it is bottled.

TASTING NOTES
Intense straw-yellow colour, with golden nuances. A delicate and lasting bouquet with fine and delightful hints of fresh fruit.
Good acidity in the right balance with flavours of apricots and peaches; definitely sweet, very round and mature in its final sensation.

GASTRONOMIC MATCHING
It is perfect when drunk chilled at a temperature of 10-12°C in crystal glasses; it is at its best when served with desserts and confectionery.
