PRODUCTION TECHNOLOGY
The must from pressing Chardonnay grapes, is bottled in March of the year after harvest at which stage it is completely mature. Sugar and yeast is added and refermentation takes place in the bottle.
This process is responsible for the distinctive and unique effervescence. The wine is then left to mature on the yeast lees for about 24 months. During this period of storage in the bottle, the wine loses its herbaceous distinctive features and assumes the character of a very delicate and fine sparkling wine.
The procedures of “remuage” and “degorgement” prepare the wine for drinking. The final product is only ready to be enjoyed three years after the harvest.

TASTING NOTES
Fine and intense effervescence with a persistent and lively foam, characteristic straw-coloured yellow nuances with clear greenish sparkles. The complex perfume displays aromas of fruit, lime, aromatic herbs, acacia flowers and honey which pay homage to the true nature of a Chardonnay.
The taste is long, harmonious and fascinating

GASTRONOMIC MATCHES
Excellent as an aperitif, it complements raw fish, crustaceans, soup and fresh cheeses.

At a temperature of 20°c this sparkling wine has 5,0 bars
