PRODUCTION TECHNOLOGY
DOGMA, the name resumes our firm Belief , our Philosphy, the deep and personal certainty that the Pinot Nero is and will remain an extraordinary grape.
Pinot noir requires a great care especially during the last phase of grapes maturation into the vineyards.This scrupulous precision before harvesting time is necessary to obtain a light colour and a quite high acidity, indispensable for giving longevity to the wine.
The must obtained from the Pinot nero grapes soft pressing, in March of the following year after the harvest, is completely matured and it is bottled. The wine is sugared and added of yeasts and it achieves the second fermentation into the bottle.
At the end of this process which produces the characteristic perlage, the wine undergoes a maturation on the yeasts which lasts about 24 months.

TASTING NOTES
Fine and intense perlage, persistent and lively foam which gives origin to a flurry of colours as a yellow nuance with clear greenish glints or a copper colour typical of a sparkling wine obtained from pinot noir grapes.
The olfactory scene is elegant and attracting with remembrances of moss, leather, banana, citrus fruits mixed to underbrush, tobacco and eucalyptus aromas.

GASTRONOMIC MATCHES
Excellent as aperitif and delicious as a sparkling end in and situation, it matches delicately with raw fish, crustaceans, soups, white meats and fresh cheese.

Effective alcholic content 12,5% vol.
Total acidity 6,4 gr/l
At a temperature of 20° C this sparkling wine has 5,5 bars
